How It's Made

The grapes were carefully picked by hand in mid-October 2023 to ensure the best quality fruit. They underwent 7 days of skin contact to add extra flavour and that beautiful orange colour. After skin contact, the grapes were gently pressed and allowed to ferment with their own natural yeasts. Before fermentation finished, the wine was bottled to capture the natural bubbles, creating this lively sparkling wine.

About the Winemaker

Made by husband and wife team Marc and Miriam at Cellar Baluard in Catalonia. This wine comes from their "La Cova" plot in Tarrés - a natural amphitheatre where 50-year-old Parellada vines grow overlooking rolling hills, olive trees, and patches of wild forest. The raised position means it gets a steady breeze, keeping the grapes fresh and full of flavour. It's a quiet, beautiful spot and you can really taste that sense of place in the wine.

What is natural wine?

Natural wine is wine made with as little interference as possible. That means organic grapes, wild yeast, and no added chemicals. It’s wine, just more natural.

Why does natural wine taste different?

Because it's made differently! Natural wine often has more flavour, a bit of fizz, or funk, but that’s what makes it exciting.

Why is it cloudy?

Natural wine isn’t usually filtered, so it can look a little cloudy. That’s totally normal (and part of the charm).

Should I keep natural wine in the fridge?

White, orange and sparkling? Yes. Red? Cool and dark is best, but you can chill reds a little too!

How long does it last once opened?

Most bottles are good for 2–3 days in the fridge. Pet-nats and fizzy wines are best the same day.
