How It's Made

The juice starts fermenting naturally with wild yeasts in stainless steel and oak barrels - no temperature control, no added chemicals. Here's where it gets interesting: instead of letting fermentation finish completely, Christoph bottles the wine while it's still fermenting. This means there's still sugar and live yeast in the bottle, which keeps working and creates natural bubbles as the CO2 as nowhere to escape to. It's how sparkling wine was made before big companies took over with artificial methods.

About the Winemaker

Made by Christoph Hoch at the family's Hollenburg vineyard. The Hoch Family have been making wine here since the 1640s - that's nearly 400 years of tradition. Christoph represents the new generation, having started in 2009 and switched to natural, chemical- free farming by 2013. Working alongside his father Harald and wife Julie-Ann, he's always pushing boundaries with innovative natural methods while respecting centuries of family knowledge.

What is natural wine?

Natural wine is wine made with as little interference as possible. That means organic grapes, wild yeast, and no added chemicals. It’s wine, just more natural.

Why does natural wine taste different?

Because it's made differently! Natural wine often has more flavour, a bit of fizz, or funk, but that’s what makes it exciting.

Why is it cloudy?

Natural wine isn’t usually filtered, so it can look a little cloudy. That’s totally normal (and part of the charm).

Should I keep natural wine in the fridge?

White, orange and sparkling? Yes. Red? Cool and dark is best, but you can chill reds a little too!

How long does it last once opened?

Most bottles are good for 2–3 days in the fridge. Pet-nats and fizzy wines are best the same day.
